You can easily book a shuttle from Copan to La Ceiba once you arrive. We decided to fly from La Ceiba back to Belize. However, a lot of travelers head to spend a couple of nights in Lago de Yojoa to break up the long journey to get to Nicaragua.
If you want to get back to Antigua from La Ceiba, I would spend 1 night in Copan Ruinas on the way back to break up the long travel day.
